wood ear mushrooms- I accidentally reconstituted too much!?
I have never used dried mushrooms before and did not realize that they were this big. I accidentally reconstituted way too many and I know they dont store well this way. I managed to make a decent hot and sour soup finally!
What can I do with them? Are they good tossed into a rice cooker with rice? I only have basic pantry stuff available and a few spices, veges, and chicken. Any suggestions?
Heat a bit of oil, sesame would be great. Fried them a little. Add some soy sauce, chicken bouillon and a splash of wine (option). Stir fry and eat!!
Oriental Mushroom Broth
Preparation Time: 12 mins. Cooking Time: 15 mins.
Serve this colourful low fat soup for lunch or as a first course for a dinner partyIngredients
4 cups chicken broth
1/2 lb.small fresh mushrooms, thinly sliced 250 g
1medium carrot, thinly sliced diagonally
1large leek (white part only) sliced (about 2 cups/500 mL)
2 tsp minced fresh gingerroot10 mL
2 tbsp soya sauce (optional)25 mL
Method
Bring chicken broth to boil. Add mushrooms, carrot, leeks, red pepper and gingerroot; bring to boil. Cover and lower heat to simmer for about 8 minutes or until vegetables are tender. Taste and add soya sauce if desired.
